As promised, here’s my Mexican Style Veggie Soup (Caldo de Verduras) recipe. This is one of my favorite soup’s because it’s healthy, easy, and super tasty! I like soups, but I tend to get bored of them, but not with this one! I made a big pot of it and am taking the last of it for lunch tomorrow. So here it goes-
2 small white potatoes
2 ears white corn on the cob
handful of fresh green beans
1/4 head of cabbage (can be pretty much any veggies of your choice)
cilantro – for cooking and garnish (optional)
broth – either bouillon flavoring, fresh, or store bought
1 Tbl. canned chipotle chili peppers
1 Tbl. black grond pepper
8-10 cups of liquid (either bullion with water or broth)
lime for garnish (optional)
1. Coarsely chop veggies
(i.e. quarter the potatoes, break corn into 2-3 pieces, cut carrot in 3 pieces and halve those pieces down the middle to form a half circular shape, quarter the chunk of cabbage, trim stems off green beans, and quarter the chunk of cabbage )
2. Bring liquid to a boil and add bullion if not using broth
3. Bring water down to a simmer and add the veggies that take the longest to cook first.
(i.e. potatoes and corn for about 15 minutes, add carrots and green beans for another 10 minutes, add cabbage and about 5 sprigs of cilantro leaves at the end).
4. Add the chipotle peppers, season with pepper and possibly additional salt as needed (you may want to taste the broth), and let simmer for an additional 10 minutes.
5. Ta Da! You’re ready to enjoy! Serve in individual bowls and garnish with additional cilantro and lime (optional but highly recommended)
